Ingredients
- 2 cups cooked rice (cold, leftover is best!)
- 2 eggs (beaten)
- 1 cup frozen peas & carrots
- 2 tbsp soy sauce
- 1 tbsp sesame oil
- 2 green onions (chopped)
Execution

Heat sesame oil in a pan. Scramble eggs, then push to one side.

Add peas & carrots, then stir in rice and soy sauce.

Mix everything together and cook for 3-4 minutes. Top with green onions.
Additional tips
- Always cook extra rice and store it in the fridge for quick meals!
